My car insurance company refused my request on the basis it is unlikely but not impossible. Is this allowed?

I had a Grande Punto (2006) and parked in a drink with a friend that I have little fuel in the tank and just steps away from home. I returned the car two days later and the car was not there. The car was found by police burnt on the way home. My insurance company say it is unlikely that someone steal and burn. Is not that what I have, if anything happened to pay with my little car? I do not know how it away. I have been paid 75 pounds on my windshield to the previous month.
